I am thankful for some good looking vegetables this time of year. I made two pots of chili (one mild, one not so mild) to host my quilting bee, and the "hot" one included lots of fresh and colorful veggies that looked good on the counter when I took them out of the fridge. But chili almost always taste better the second day when all the flavors blend so nicely together. Cheers to the second, third and fourth bowls on subsequent days.
