I became a real eggplant eater this summer and I cannot get enough of this vegetable. Most people either love it or really dislike it. It's very flavorful the way I've prepared it all summer and I made it again today. The kicker is using romo tomatoes (they have less juice when cut), some garlic and spices and its in the oven in no time. Delicious!
